LEMON CHICKEN BAKE




What it is made of (Ingredients):

6 chicken thighs skin on and bone-in
5 cloves of garlic
1/2 cup Real Lemon Juice and 2 slices of lemon
8 scallion - green onions rough chopped
1 tablespoons olive oil
A shake of salt
1/4 teaspoon pepper
1 small piece of fresh ginger
10 small potatoes washed and microwaved for 3 minutes

What to do (directions):

Cover an oven baking sheet with aluminum foil. Place the rack on top of it. Rub the rack with oil.
To a food processor or blender add garlic, lemon juice, and 2 slices, along with scallions, salt and pepper, and ginger.
Blend 20 seconds until well combined and a liquidy paste forms. Pour into a large bowl.
Rinse and pat dry chicken thighs.
Add to a large bowl with marinade and rub into chicken. Getting under the skin.
Cover and let rest in refrigerator 5 minutes minimum.
When ready to bake:
Preheat oven to 200 degree Celsius
Lay the potatoes on the baking sheet put the rack on top of it.
Lay chicken SKIN SIDE DOWN on top of the rack.
Cook for 30 minutes and turn chicken over.
Cook for an additional 45 minutes. Turn off the oven and leave it for another 15-25 minutes until the chicken browns well.
Let rest for 5 minutes and serve!
